Shirazi salad is a vibrant, colorful salad from Iran. With cucumbers, onions, tomatoes, herbs, mint, and a citrusy dressing, itβs super refreshing.

Ingredients
INGREDIENTS
6small Persian cucumbers or 2 English cucumberunpeeled, diced small
6ripe firm Roma tomatoesdiced small
1red onionfinely chopped
3tablespoonsfinely chopped fresh cilantro
3tablespoonsfinely chopped fresh parsley
1teaspoondried mint
DRESSING
β teaspoonkosher salt
1/2teaspoonfreshly-cracked black pepper
1/2teaspoonfine lime zest
6tablespoonsfresh squeezed lime juiceabout 3 medium limes
4tablespoonsextra-virgin olive oil
Instructions
Remove the seeds from the Roma tomatoes prior to chopping then dice the cucumbers, tomatoes and red onion into small cubes all the same size (please see inspo photos). Add to a bowl.
Add the finely chopped parsley and cilantro.
In a small bowl use a whisk to combine the lime juice, lime zest, salt, pepper and olive oil.
Add dressing to the salad ingredients. Toss gently to coat. Serve immediately.
