Ingredients
1/2poundrigatoni pasta(8 ounces)
4tablespoonsbutter
1 ½tablespoonsall-purpose flour
8garlic clovesminced
1/2cupchicken broth
2tablespoonslemon juice + zest of 1 lemon
2cupheavy/whipping cream
3/4cupparmesan cheesefreshly grated
salt & pepper to taste

Instructions
Boil the Pasta –Bring a large pot of water to a boil, then generously salt the water. Add the pasta and cook according to the package directions until al dente.
Make the Roux –Melt the butter in a skillet over medium-high heat. Once melted, sprinkle in the flour and cook, stirring frequently, for 1 minute.
Add Flavor –Stir in the garlic, then add the chicken broth, lemon juice, and zest. Let it simmer for 1 minute.
Simmer with Cream –Whisk in the cream, then reduce the heat as needed to maintain a gentle simmer. Let it cook for about 10 minutes, or until the sauce has thickened.
Melt the Cheese –Reduce the heat to low and stir in the parmesan cheese until fully melted. Season with salt and freshly cracked black pepper to taste.
Finish and Serve –Add the drained pasta to the skillet and toss until fully coated in the sauce. Pro Tip: Before draining the pasta, save a tablespoon or two of the pasta water. If the sauce becomes too thick, you can add a little pasta water to thin it out, but it shouldn’t be necessary. Garnish with extra parmesan and serve immediately.
