2ozReposado tequila
2ozFresh grapefruit juicefreshly squeezed plus wedge for garnish
1/2ozCointreau or Triple Sec
1/2ounceLime juicefreshly squeezed plus wedge for garnish
1/4ozSimple syrup (can be homemade or store-bought)or to taste
1 - 2ozClub soda or grapefruit club soda
2tbspTajín seasoningfor rimming the glass

3/4cupWater

Instructions
Simple Syrup
In a small saucepan over medium-high heat, bring sugar and water to a gentle boil.
Stir until the sugar dissolves, then simmer until the syrup thickens, about 5 minutes.
Pour the simple syrup through a strainer into a mason jar. Chill the syrup in the fridge until cold for at least 30 minutes. If not using immediately in this recipe, you can store the simple syrup in a mason jar for up to 30 days.
Paloma
Place tajín on a plate.
Take a grapefruit wedge and run it along the rim of a cup. Then, place the cup upside down on the plate filled with tajín to coat the rim with the seasoning.
Fill a cocktail shaker ¾ full with ice. Add tequila, freshly squeezed grapefruit juice, Cointreau, lime juice, and ¼ oz of Simple Syrup. Secure the top and shake vigorously until the shaker is frosted.
Pour the Paloma mixture through a strainer into a cocktail glass filled with ice, and then top it off with grapefruit sparkling water or regular club soda.
Garnish the glass with a grapefruit wedge and add a lime wedge inside.
