Ingredients

Maple Bacon

  • 8-10 slices thick cut bacon
  • maple syrup
  • black pepper

Whipped Feta

  • 1 block feta 500 grams, chopped into smaller cubes
  • 2 tablespoons extra-virgin olive oil
  • 1/3 cup plain Greek yogurt
  • 4 tablespoons maple syrup
  • 3 garlic cloves
  • 1/2 cup walnuts roughly chopped

To Serve

  • 1 baguette sliced into 1/2-inch thick slices
  • balsamic glaze for drizzling
  • maple syrup for drizzling
  • fresh thyme leaves sprinkled for garnish

Instructions

  • Bake the maple bacon: Preheat the oven to 400°F. Line a large baking sheet with parchment paper and arrange the bacon strips in a single layer. Pour the maple syrup into a small bowl, then use a silicone basting brush to coat each strip and sprinkle lightly with black pepper. Bake for 15 to 20 minutes, or until crispy. Carefully remove some of the bacon grease, roughly chop the bacon, and set aside.
  • Toast the baguette: With the oven still at 400°F and the rack in the center position, slice the baguette into 1/2-inch-thick pieces and place them on a parchment-lined baking sheet. Brush the tops lightly with olive oil. Bake for 5 minutes, then switch to broil for 1 to 2 minutes until the edges are lightly golden. Watch closely so they don’t burn.
  • Toast the walnuts: Add the chopped walnuts to a small skillet over medium-high heat. Toast for 3 to 4 minutes, stirring often, until lightly browned and fragrant. Remove from the heat and set aside.
  • Make the whipped feta: Add the feta, olive oil, Greek yogurt, maple syrup, and garlic to a food processor. Blend for 3 to 5 minutes, scraping down the sides as needed, until silky smooth. If the mixture is too thick, add a small splash of olive oil and blend again until fully smooth.
  • Assemble: Spoon the whipped feta onto a serving plate and spread it evenly using the back of a spoon. Top with the toasted walnuts, maple bacon, fresh thyme, and a drizzle of maple syrup and balsamic glaze.
  • Serve: Serve with the toasted crostini and enjoy.
