Roasted Brussel Sprouts With Bacon Recipe

Ingredients

  • 1 pound brussels sprouts, halved (approx 15 brussels)
  • 3 tablespoons extra virgin olive oil
  • sprinkle of salt and pepper to taste
  • 6 thick-cut uncooked bacon slices chopped
  • 1/3 cup honey
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons salted butter
  • 2 teaspoons fresh orange zest
  • 1/2 cup goat cheese crumbled
  • 1 cup pomegranate seeds optional

Instructions

  • Preheat your oven to 400°F and adjust the rack to the lower third position.
  • Line a baking sheet with parchment paper. In a bowl, toss the Brussels sprouts with olive oil, and season with a pinch of salt and pepper. Arrange the Brussels sprouts cut side down on the prepared baking sheet.
  • Sprinkle the chopped raw bacon evenly around the Brussels sprouts. Roast for about 25 minutes, or until the Brussels sprouts are golden brown and the bacon is crispy.
  • Meanwhile, in a small saucepan, bring the honey to a boil over medium heat and let it boil for 1 minute. Remove from the heat and whisk in the apple cider vinegar, butter, orange zest, and a pinch of salt.
  • Remove the Brussels sprouts from the oven and drizzle them with the honey mixture. Sprinkle with goat cheese and optional pomegranate seeds. Serve warm for a delicious side dish or appetizer, perfect for your holiday dinner!
