Pumpkin Pie Bars Recipe

These Pumpkin Pie Bars have all the cozy flavor of classic pumpkin pie, baked on a buttery shortbread crust instead of pastry. The filling is creamy, spiced with cinnamon, ginger, nutmeg, and my secret pinch of black pepper for extra depth. Slice them into neat pumpkin squares and top with whipped cream for the perfect fall dessert.

Total Time 1 hour 25 minutes
Servings 12 squares

Ingredients

Shortbread Crust

  • 1 ยฝ cups all-purpose flour
  • โ…“ cup granulated white sugar
  • ยฝ teaspoon salt
  • ยพ cup (1 ยฝ sticks) salted butter, cold and sliced
  • 1 teaspoon pure vanilla extract

Pumpkin Filling

  • 1 15-ounce can (1 ยพ cups) pure pumpkin purรฉe (not pumpkin pie filling)
  • 1 cup light brown sugar packed
  • 2 large eggs
  • 1 ยฝ cups heavy cream
  • 1 ยฝ teaspoon pure vanilla extract
  • 1 tablespoon cornstarch
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • ยผ teaspoon salt
  • โ…› teaspoon freshly ground black pepper

Topping

  • whipped cream

Instructions

  • Prepare the Crust โ€” Preheat oven to 350ยฐF (175ยฐC). Lightly grease and line a 9ร—9-inch pan with parchment paper, leaving an overhang for easy removal. In a food processor, combine flour, sugar, and salt. Add cold, cubed butter and vanilla, then pulse until the mixture comes together into a dough. Press the dough evenly and firmly into the prepared pan. Bake for 20โ€“25 minutes, until the edges are lightly golden. Let sit at room temperature for 20 minutes to cool before pouring the pumpkin filling.
  • Make the Pumpkin Filling โ€” In a large bowl, whisk together pumpkin, brown sugar, eggs, heavy cream, vanilla, cornstarch, cinnamon, ginger, nutmeg, salt, and pepper until smooth. Place in the fridge until ready to pour over the shortbread crust. Re-whisk the mixture right before pouring to ensure a smooth filling, then pour over the par-baked crust.
  • Bake the Bars โ€” Pour the filling over the warm but not hot crust. Return the pan to the oven and bake for 50โ€“55 minutes, or until the filling is set and the center jiggles just slightly when you shake the baking dish.
  • Cool & Chill โ€” Cool completely at room temperature, then refrigerate for at least 6 hours (overnight is best) for clean slicing.
  • Slice & Serve โ€” Lift the bars from the pan using the parchment overhang. Slice into squares and top with whipped cream and a sprinkle of cinnamon.

Eggnog Espresso Martini

Eggnog espresso martini made with espresso, eggnog, spiced rum, and coffee liqueur, served in coupe glasses with a cinnamon garnish

If you love a good espresso martini, wait until you try it holiday-style with eggnog. This Eggnog Espresso Martini is smooth, creamy, lightly spiced, and tastes like Christmas in every sip. Bold espresso meets festive eggnog, coffee liqueur, spiced rum, and a touch of vanilla โ€” shaken ice-cold for a velvety-rich winter cocktail everyone will love. I tested a few versions before landing on this balance โ€” creamy without being heavy, coffee-forward without overpowering the eggnog. Best part? It comes together in minutes. Just shake, pour, and enjoy a restaurant-style martini right at home....

Spinach Artichoke Dip

Spoon lifting creamy spinach artichoke dip with melted, golden cheese.

Spinach artichoke dip is one of those cozy, crowd-pleasing appetizers that shows up at every great party โ€” but this version has a little twist that makes all the difference. I add just ยผ teaspoon of cayenne pepper, which sounds tiny, but it brings the whole dip to life. It doesnโ€™t make it spicy. It simply adds warmth, depth, and that subtle โ€œwhat is that?!โ€ flavour that keeps people coming back for more. This spinach artichoke dip is hot, creamy, cheesy, and baked until the top turns golden and bubbly. Itโ€™s velvety inside with pockets of fresh spinach, tender artichokes, and three cheeses...

Brie Bites in Puff Pastry

Brie bites in puff pastry filled with caramelized onions, fig jam, prosciutto, and rosemary on a white serving platter.

If you're looking for the kind of holiday appetizer that makes your guests pause mid-sentence, these brie bites in puff pastry are it. Theyโ€™re flaky, cheesy, sweet, savory, and have that perfect little โ€œwowโ€ moment when you bring them to the table. I use a combination of caramelized onions, creamy brie, fig jam, prosciutto, and a sprig of rosemary to create the ultimate biteโ€”layers of flavor wrapped in buttery puff pastry that bake up golden and beautiful. These are the bites I pull out when I want something elegant without fuss, and they are always the first thing to disappear. Theyโ€™re...
