Thatโ€™s why these Sheet Pan Chicken Quesadillas are such a game-changer. They bake all at once, slice beautifully, and the best part? I get to sit down and enjoy them with everyone else.

It might just be the easiest, most crowd-pleasing appetizer Iโ€™ve ever made. These chicken quesadillas are crispy, cheesy, packed with flavor, and made to feed a crowdโ€”no stovetop required.

This isnโ€™t your average Tuesday-night quesadilla situation. Itโ€™s big-batch, oven-baked, and designed to impress with minimal effort. And the filling? Weโ€™re layering in juicy shredded chicken, creamy refried beans, corn, salsa, garlic, onion, sour cream, and just the right amount of seasoning to make every bite taste like you ordered it at your favorite Tex-Mex spot. I use a trio of cheesesโ€”sharp cheddar, Monterey Jack, and mozzarellaโ€”for the perfect melt.

Frozen Corn Kernelsโ€”Sweet, juicy, and colourful. Corn adds a nice contrast to the creamy beans and melty cheese, and gives the filling a bit of texture.

Sour Creamโ€”Just a few spoonfuls make the filling extra creamy and help mellow out the spices. It ties everything together without making it too heavy.

Yellow Onion & Garlicโ€”The power duo. These get sautรฉed at the start to create that savoury base of flavour that makes everything else taste better. Simple, but essential.

Chili Powderโ€”Brings warmth and a gentle smoky heatโ€”itโ€™s the backbone of that Tex-Mex flavor youโ€™re craving in your Sheet Pan Chicken Quesadillas.

Ground Cuminโ€”Earthy and slightly nutty, cumin is a key ingredient in Mexican cooking, adding balance and depth to the spice mix.

Smoked Paprika, Onion Powder, Garlic Powder & Dried Oreganoโ€”These pantry staples work together to boost flavour without overpowering the other ingredients. Just a little of each gives the chicken that seasoned, restaurant-style finish.

Sharp Cheddar, Monterey Jack & Mozzarella Cheeseโ€”Each one plays a roleโ€”cheddar for flavour, Jack for perfect melt, and mozzarella for gooey stretch. Trust me, this combo is worth it.

Large Flour Tortillasโ€”The structure of your sheet pan masterpiece. They form the crispy base and golden top, and youโ€™ll need about 16 to 18 large ones to fully cover the pan.

Melted Butterโ€”Brushed on before baking, it helps the tortillas crisp up and turn beautifully goldenโ€”just like a restaurant quesadilla.

How to Make Sheet Pan Chicken Quesadillas

Step One: Sautรฉ the onion and garlicโ€”Start by softening your onion and garlic in a skillet over medium-high heat. This brings out their sweetness and lays down a savoury base for the whole filling.

Step Two: Add the spices and toast themโ€”Sprinkle in the chili powder, cumin, smoked paprika, onion powder, garlic powder, oregano, salt and pepper. Let them toast for a couple of minutesโ€”this blooms the spices and gives the filling that deep, warm flavor.

Step Three: Mix up the fillingโ€”Transfer the sautรฉed onion and spice mixture to a large bowl. Add the shredded chicken, refried beans, salsa, corn, and sour cream. Toss it all together until everything is evenly coated and combined. Itโ€™ll look a little messyโ€”donโ€™t worry, thatโ€™s what makes it so good.

Step Four: Prep your sheet panโ€”Lightly brush the bottom of a 13ร—18-inch sheet pan with melted butter. This helps the bottom tortillas crisp up while baking (and prevents sticking, which is key).

Step Five: Layer the tortillasโ€”Arrange the tortillas around the pan, overlapping them so they hang over the edges. Place more down the center to fully cover the bottom. It should look like youโ€™re building a tortilla blanketโ€”trust the process.

Step Eight: Press and bakeโ€”Place a second sheet pan on top of the quesadilla to weigh it down. This helps it bake evenly and hold its shape. Bake at 425ยฐF for 20 minutes, then remove the top pan and bake for 5 more minutes until everything is crisp and golden.

Frequently Asked Questions

Can I use corn tortillas instead of flour?

I donโ€™t recommend it for this recipe. Corn tortillas are smaller and tend to crack when folded, especially in a layered format like this. Flour tortillas hold up better, fold with ease and give you that golden, crispy crust.

Do I need to weigh it down with a second sheet pan?

Yes, if you can! It helps the quesadilla bake evenly and keeps all those layers pressed together so it cuts cleanly. If you donโ€™t have a second sheet pan, a cast iron skillet or any heavy oven-safe dish will do the trick.

My tortillas didnโ€™t get crispyโ€”what happened?

Two things to check: First, make sure you brushed the bottom of the pan and the tops of the tortillas with melted butter (thatโ€™s what helps them crisp). Second, donโ€™t skip the uncovered bake at the endโ€”thatโ€™s when the tops really get golden.

Can I use pre-shredded cheese?

  • 1 yellow onion finely chopped
  • 6 garlic cloves minced

Filling

  • 6 cups cooked shredded chicken
  • 1 16 oz can refried beans
  • ยฝ cup salsa use my 5-minute homemade salsa if you like
  • 2 cups frozen corn kernels thawed
  • 1/4 cup sour cream

Assembly

  • butter melted for brushing
  • 16-18 large flour tortillas
  • 1 โ…“ cups sharp cheddar cheese
  • 1 โ…“ cups Monterey Jack cheese
  • 1 โ…“ cups mozzarella cheese

Instructions

  • Sautรฉ the aromatics โ€“ In a large skillet over medium-high heat, add olive oil, onion, and garlic. Sautรฉ for 5 minutes, stirring occasionally, until softened.
  • Toast the spices โ€“ Add chili powder, cumin, smoked paprika, onion powder, garlic powder, oregano, salt, and pepper. Stir frequently and sautรฉ for 2 more minutes to bloom the spices.
  • Combine the filling โ€“ Transfer the onion and garlic mixture to a large mixing bowl. Add shredded chicken, refried beans, salsa, corn, and sour cream. Toss until evenly combined.
  • Prep oven and sheet pan โ€“ Preheat oven to 425ยฐF. Lightly brush the bottom of a 13ร—18-inch sheet pan with melted butter.
  • Assemble the base layer โ€“ Arrange tortillas overlapping around the perimeter of the pan so that half of each tortilla hangs over the edge. Place two or three tortillas in the center to fully cover the bottom.
