This hot, cheesy Spinach Artichoke Dip is baked until golden and bubbling, with a rich, creamy texture and the perfect balance of spinach, artichokes, and three melty cheeses. It comes together quickly and always disappears fast! The ultimate party appetizer for game days, holidays, and cozy nights in.

Spinach artichoke dip is one of those cozy, crowd-pleasing appetizers that shows up at every great party โ€” but this version has a little twist that makes all the difference. I add just ยผ teaspoon of cayenne pepper, which sounds tiny, but it brings the whole dip to life. It doesnโ€™t make it spicy. It simply adds warmth, depth, and that subtle โ€œwhat is that?!โ€ flavour that keeps people coming back for more.

This spinach artichoke dip is hot, creamy, cheesy, and baked until the top turns golden and bubbly. Itโ€™s velvety inside with pockets of fresh spinach, tender artichokes, and three cheeses that melt together perfectly. The texture is rich and luxurious, thanks to a base of cream cheese and sour cream, and the flavours balance beautifully between garlicky, cheesy, and lightly seasoned.

Whether youโ€™re hosting a holiday gathering, bringing something for game day, or just want a no-fuss appetizer that everyone always loves, this one is easy, reliable, and absolutely delicious. Itโ€™s the dip I make when I want zero leftovers โ€” because there never are.

Recipe Ingredients

Fresh spinach โ€” gives the dip a softer texture and fresh flavour compared to frozen. Roughly chopping it keeps the pieces tender and easy to scoop.

Oil from the artichoke jar โ€” adds extra savoury flavour you wonโ€™t get from regular olive oil.

Salted butter โ€” helps sautรฉ the garlic and spinach while adding richness.

Garlic โ€” ten cloves might sound bold, but once cooked and baked, it becomes mellow and deeply flavourful.

Full-fat sour cream โ€” adds tanginess and creates that silky, creamy texture everyone loves.

Full-fat cream cheese โ€” softens into a velvety base that binds the whole dip together.

Artichoke hearts โ€” drained, squeezed, and chopped so they add brightness and texture without making the dip watery.

Freshly grated Parmesan โ€” brings a savoury, nutty depth of flavour that complements the richness.

White cheddar cheese โ€” melts beautifully and helps create that golden, bubbly top. Part goes inside the dip, and part goes on top.

Gruyรจre cheese โ€” adds a buttery sweetness that takes this dip to the next level.

Cayenne pepper โ€” my secret ingredient! You only need a ยผ teaspoon which adds subtle warmth and rounds out the richness without making it spicy.

Salt & freshly cracked black pepper โ€” simple seasonings that wake everything up.

Step-by-Step Instructions

Step One: Preheat the Oven โ€“ Heating the oven to 375ยฐF ensures the dip melts evenly and the top browns beautifully.

Step Two: Sautรฉ the Garlic and Spinach โ€“ Cooking them together deepens the garlic flavour and removes excess moisture, keeping the dip creamy, not watery.

Step Three: Mix the Base โ€“ Blending the sour cream and softened cream cheese makes the texture silky and ensures everything melts together evenly.

Step Four: Add the Veggies & Cheese โ€“ Folding instead of mixing helps keep the dip light while distributing everything evenly.

Step Five: Transfer and Top โ€“ Spreading the dip into a baking dish and adding extra cheddar helps create that perfect golden crust.

Step Six: Bake and Broil โ€“ Baking melts everything beautifully; broiling gives you that irresistible bubbly, golden finish.

Step Seven: Serve and Enjoy โ€“ Letting it cool slightly thickens the dip so it scoops perfectly.

Frequently Asked Questions

Can I use frozen spinach?

Yes! Thaw completely and squeeze out all the excess water. Fresh spinach gives the softest texture, but frozen works great.

Can I make this ahead of time?

Definitely. Prepare the dip up to one day ahead, cover tightly, and refrigerate. Bake when ready to serve.

Can I make this in the slow cooker?

Yes. Add everything to your slow cooker and heat on LOW for 2โ€“3 hours. For a browned top, transfer to a baking dish and broil for 1โ€“2 minutes.

What do I serve with spinach artichoke dip?

Toasted baguette slices, crostini, pita chips, crackers, or fresh veggies.

Can I lighten it up?

You can use light sour cream or light cream cheese, but the full-fat version gives a richer, creamier texture.

Expert Tips & Tricks

  • Use freshly grated cheese for the smoothest melt.
  • Sautรฉ the spinach to remove excess moisture โ€” this prevents the dip from turning watery as it bakes.
  • Donโ€™t skip the broil โ€” it creates that perfect golden crust.
  • Rest for 15โ€“20 minutes before serving so the dip thickens and scoops perfectly.
  • Chop the artichokes evenly so every bite has a little of everything.

Variations & Pairings

Variations

  • Spice it up: Add jalapeรฑos or a pinch more cayenne.
  • Extra creamy: Add mozzarella for even more stretch.
  • Lighter version: Swap Greek yogurt for sour cream.

My Wine Pick

A crisp Sauvignon Blanc or Pinot Grigio cuts through the richness beautifully.

Making Ahead, Storing & Freezing

Make Ahead: Prepare the dip (without baking), cover, and refrigerate for up to 24 hours.

Storing: Store leftovers in an airtight container for up to 3โ€“4 days.

Freezing: Freeze before baking. Thaw overnight, then bake as directed.
