Healthy Marry Me Chicken Recipe
Ingredients
- 4 chicken breasts boneless, skinless
- 2 tablespoons sun-dried tomato oil from the jar of sun-dried tomatoes
- 1 tablespoon extra-virgin olive oil
- 8 cloves garlic minced
- 1 13.5-ounce can full-fat coconut milk shaken well before opening
- ยฝ cup chicken broth
- 1 teaspoon dried oregano
- ยพ cup sun-dried tomatoes roughly chopped
- ยฝ cup parmesan cheese freshly grated
- salt and pepper to taste
- 1 tablespoon all-purpose flour
- 3 tablespoons chicken broth for slurry
- ยฝ cup fresh basil julienned, plus more for garnish
Instructions
- Prepare the Chicken: Pat the chicken breasts dry. Place them between two pieces of plastic wrap and pound to ยผ-inch thickness. Season both sides with salt and black pepper.
- Sear the Chicken: In a large skillet, heat the sun-dried tomato oil and extra-virgin olive oil over medium heat. Swirl to coat the pan. Add the chicken and sear for 5 minutes per side, until golden brown. Transfer to a plate, cover, and set aside.
- Cook the Garlic: Reduce the heat to medium-low. If needed, add a small drizzle of sun-dried tomato oil. Add the minced garlic and cook for about 30 seconds, until fragrant.
- Build the Sauce: Pour in the coconut milk, stirring to deglaze the pan and scrape up any browned bits. Stir in the chicken broth, sun-dried tomatoes, parmesan cheese, and oregano. Bring to a gentle simmer.
- Simmer the Chicken: Return the chicken to the skillet. Cover and simmer for 15 minutes, until cooked through and tender.
- Thicken the Sauce: In a small bowl, whisk together the flour and chicken broth until smooth. Move the chicken to the edges of the skillet and pour the slurry into the center of the pan, whisking it into the sauce. Simmer for 1โ2 minutes, until thickened.
- Finish and Serve: Remove from heat and stir in the fresh basil. Garnish with additional basil and plate the chicken with the sauce.
